Chef Collaborative Board Member Chef Derek Wagner of Nicks on Broadway put together a dream team for the 5th Annual Rhode Island Harvest BBQ hosted by Schartner Family Farms on October 19! It was a sellout and a great time was had by all. There was a long line of people lined up for the delicious goat tacos Jake Rojas of Tallulah’s Taqueria cooked up! The Vermont Chevon fired roasted tacos, with Salsa Rojo, cilantro and pickled onion were a huge hit. When the goat arrived before the BBQ, Jake’s crew rubbed the cavity with salt and garlic and hung it for another two days. The goat was cooked over a live fire and continuously sprayed with salt water brine and rebased with it own fat. Goat is currently on the menu at Tallulah’s. Check it out.
